Here, I've gathered info on some of my favorite cow cheeses. I admitt, here (and the other cheeses) I've added cheeses that I've never tried, but instead sound good and I want to try them.

Asiago
Asiago- Made in Italy with a hard texture. There's one type that takes 20-30 days to mature, while Asiago d'Allevo takes 2 years. Asiago d'Allevo is full of holes and has strong, sharp taste.

Cheddar
Cheddar- Comes from England and has a semi-hard texture with 48% fat. This is a world class cheese! It can be white, yellow, orange, yellow-ornge, and weak yellow; some of which have color added to it. The name isn't protect so its name can be used freely. The longer it has matured (at least 9 months, 2 years at the most) the sharper taste it has, the yonger it is the smoother the texture.
